Patsa not Pasta

Sometimes (quite often, actually) at one of my favourite tavernas I see chalked on the blackboard "SIMERA PATSA"

At first I smiled, and thought that whoever wrote "SIMERA PATSA" could not spell "pasta".  Then I found out that PATSA is tripe.  I've been eating at that taverna for 25 years, but have never (yet?) tried PATSA.

Reading about PATSA, it sounds like a year round version of Easter soup.  And I have eaten Easter soup several times.  At first I didn't really like Easter soup, but it gradually grew on me, and now I quite like the broth, if not the miniature inner tube like bits sulking at the bottom of the bowl.
